History and Origin of Black or Large Cardamom

Large cardamom (Amomum subulatum Roxb.), a member of the family, Zingiberaceae (ginger) under the order Scitaminae is the main cash crop cultivated in the mountainous area from the Himalayas to Southern China. The main production regions are Eastern Nepal, India, and Bhutan. More than 50 percent of the world’s harvest is produced in India in the state of Sikkim and the Darjeeling district of West Bengal. Capsules are used as spices. The Indian name for black cardamom is badi elaichi or kali elaichi. Roughly one inch in length, the pods are dark brown to black and have tough, dried, wrinkly skin. Cardamom is the world’s third-most expensive spice, surpassed in price per weight only by vanilla and saffron. In domestic markets only two grades viz., Chhota dana (small capsules) and bada dana (bold capsules) are available, without any specification. The Bureau of Indian Standards (BSI) has standardized quality specifications for large cardamom.

Taste Profile: Black Cardamom

Black cardamom is dried over an open fire and has a distinct smoky aroma and flavor. The pods are highly aromatic but not as much as green cardamom. In recipes, black cardamom should not be used if a recipe calls for green cardamom. The two pods have extremely different taste profiles. Unlike green cardamom, the black variety of this spice is rarely used in sweet dishes.

Black cardamom has notes of resin and camphor, as well as menthol, slightly minty aroma that provides balance to an otherwise funky flavor. These intense, heady notes put black cardamom in the “warming” spice category, along with black pepper, cloves, and chilies.

Grading and quality standards of Black Cardamom

Finished large cardamom capsules are commercially graded in local markets as bada dana (big capsules) or Chota dana (small capsules) and, sometimes more traditionally, as kainchi-cut (capsule tail removed) or non-kainchi-cut (capsule tail intact). The difference in capsule size may be due to cultivar differences or pre-harvest conditions.

Black cardamom is one of the key ingredients of India’s famous aromatic garam masala spice mixture.
